2-1/2 c. flour
1 c. sugar
3/4 c. semisweet chocolate chips
1/3 c. unsweetened cocoa
2 t. baking powder
3/4 t. salt
1 c. ricotta cheese
2 large eggs, lightly beaten
1-1/3 c. 2% milk
1t. vanilla
1/4 c. oil
Mix the flour and next 5 ingredients (through salt) in a large bowl. Put the cheese into a medium bowl. Add the eggs gradually, beating well. Whisk in the milk and vanilla until blended. Fold the cheese mixture and oil into the flour mixture just until blended. Spoon batter into muffins cups and bake 25 minutes in a 350 degree oven. Remove the muffins from the pans immediately and cool on a wire rack.
