Banna Nut Loaf

Instructions:


1. Preheat over to 350 degrees F (175 degrees C)

2. Grease one 9x5 loaf pan. (Okay for muffins with 20 to 30 min. baking time!)
    (You can dust the greased pan with granulated sugar.)

3. Cream together 1 cup white sugar and 1/2 cup shortening.

4. Mix in 2 eggs, 1/2 tsp. vanilla, 1 tsp. baking soda, 1/2 tsp. salt, 3 tsp.     cinnamon.

5. Mix in 1-1/2 cups mashed bananas and 1/4 cup milk.

6. Add 1 cup flour, 1 cup oatmeal, 1/2 cup chopped pecans and mix thoroughly.

7. Bake loaf for 50 to 60 minutes. Test with toothpick or tester - it should come     out clean when your loaf or muffins are done (no sticky dough on tester.)

** all purpose flour is first choice, but bread flour will work.
** old fashioned oatmeal is first choice, but quick cooking
    oatmeal is okay.
